Fool Proof Scotch Eggs


I rarely post other people’s recipes on here but I was so impressed with Barney Desmazery’s  foolproof scotch egg recipe I just had to share!

With cooked ham, stuffing and herbs incorporated into the sausage meat layer, these scotch eggs are really flavoursome, and, most importantly, the yolks are left runny if you stick to the exact cooking time!

Try incorporating bacon rashers to the sausage meat and blitz until smooth to add a smoky flavour.


I added paprika into the sausage meat for a spicy flavour! I would serve with salad and piccalilli (I used the chilli sweetcorn relish I made over Christmas!).





  1. I’m going to pass this recipe on to my husband. He loves Scotch eggs but has struggled to get the meat seasoned nicely since we emigrated as he was used to pre-seasoned and spiced sausage meat.

    While I don’t often run recipes on this blog, I do occasionally, especially when I see something out there that looks particularly delicious. Here is a tasty morsel from the Tassy Bakes blog (who has not appeared in my reblog list before now), with instructions on how to make a perfect Scotch Egg. This is a pretty difficult art, and just browsing the photos from this article makes me hungry! I’ve found eggs are really hard to get “just right” and Scotch Eggs evidently even more so, therefore this article is really useful for those of you game to try. Great job Tassy!
