Apple and Cinnamon Cupcakes

My penchant for cupcakes continues with this fresh and fruity recipe. Spiced sponge with apple chunks piped with a cream cheese frosting make these moist and flavoursome. I may have just made these, but they are flying from the box already, so look out for another cupcake post in the near future!

      1. Hiya, here is the recipe!

        80g butter
        280g caster sugar
        240g plain flour
        1tbsp baking powder
        Pinch salt
        2 tsp ground cinnamon
        240ml milk
        2 eggs
        2 peeled and chopped apples (tiny pieces)

        Combine butter, sugar, flour, baking powder, salt and cinnamon. Whisk eggs and milk in a jug and pour into the flour mixture. Mix until smooth then fold in the apples. You could also add some chopped walnuts.

        Bake for 20 minutes at 190.

        For the icing:

        500g icing sugar, 80g butter, 300g cream cheese.

        Combine and whisk until smooth.
